The kitchen is currently led by Executive Chef Matías Gil Falcón and maintains a strong connection with regional and seasonal ingredients. Lamb, different cuts of beef, pork, vegetables, and local fruits are featured in a menu that combines Mendoza’s culinary traditions with carefully crafted presentations.
Fire plays a central role in the cuisine, with techniques such as grilling, clay-oven cooking, and traditional open-fire roasting, alongside artisanal preparations made in-house.
The restaurant serves breakfast, lunch, and dinner, both for guests staying at Posada Salentein and as part of the gastronomic experiences available at the property.

Restaurante San Pablo is part of Posada Salentein, a small country estate surrounded by gardens and vineyards in the San Pablo GI, at the foot of the Andes Mountains.
